Eureka!

I'm blogging from my phone tonight since we no longer have a working computer, so I apologize for the ugliness of my post and the lack of picture I was planning on putting up.

First I have to give everyone an Ephraim update:
Yesterday was his half birthday! I can't even believe it has been 6 months already.
He also went to the doctor yesterday. He weighs a whopping 18 1/2 lbs and is 27in long.
He is in the 75th percentile in everything (weight, length, and head size), so even though
he's a bigger fella he's proportionate!
He is sitting up by himself so well now and he is more and more curious each day. I love watching him reach for things and start to figure out what they are and what their function is. He's been loving his homemade baby foods and I'm about to mix it up a little and start trying some meat based recipes. He's such a sweet little man!


Now on to my "eureka" moment:
I threw stephan a surprise birthday party for his 25th birthday, in July. For that party I made some really yummy cupcakes and while doing so I started to get an idea of trying to go to culinary school. Stephan and I have turned into huge "foodies". We love to cook all the time. In fact I've grown to like it so much that I actually went to olive garden and after my meal thought "ummm stephan and I could have made something so much better!". Cooking together is something I really look forward to during the weeks. I myself however, am a much better baker than I am a cook and I enjoy baking new (sweet) things whenever I have the chance! Actually, throught the time stephan and I were dating we often talked about out future plans and in those plans were dreams to one day open a bakery. All this said, I started thinking a lot about that dream again after I made those cupcakes, so I started looking into culinary schools around Birmingham. I called and spoke with a director of admissions at the Culinard Institute of Birmingham and got lots of helpful information about their programs. He told me that for what I wanted to do when I got out of school (the bakery) that I would be better suited for their pastery program. This is a Monday through Friday, 36week nighttime program. Nighttime is perfect for me because I will only have to arrange childcare for Ephraim on the night stephan has church. Stephan and I are planning to go tour the school within the next two weeks and also talk with the admissions office to see what kind of grants, scholarships, financial aid goodness I would qualify for. Needless to say I'm rather excited. I am moving forward towards a dream I had put in the very back of my mind because I simply though it might never be a possibility. Stephan is being very supportive and I am so thankful to have him supporting me as I try to make this dream into reality!
